Well, Thursday was my Happy 2nd Trimester day. Jon and Ricky had planned a video game night full of killing terrorists or something of the sort. Jackie and I planned to go to the Taste of Yukon. We got to walk around and sample many different foods from many different restaurants surrounding the Yukon area. What more could a pregnant gal ask for??
Friday was bunco night with the girls! Jackie was hosting and she made some AWESOME enchiladas! We all had a great time....except the girls were trying to sabotage my lucky streak :) I didn't have to visit the "loser" table once!!! I got one of the prizes at the end of the game - which were these really cute yellow ramekin cups and Jackie's recipe for Breakfast Blossoms. It was such a great evening!
Saturday, I made a trip to the mall and then we spent the evening with Jon's family at Liz and Bernie's house for Bernie's birthday. Sunday - I got up and made the Breakfast Blossoms. They were delicious!!! Thanks Jackie!
Breakfast Blossoms
1 puff pastry sheet (thawed for 40 minutes and cut into 4 squares)
baby spinach leaves
shaved ham
eggs
grated cheese
Thaw puff pastry for 40 minutes. Cut into 4 squares and put into ramekin cups sprayed with Pam. Place 3-4 spinach leaves on bottom, a couple pieces of shaved ham, raw egg, and some grated cheese. Bake in preheated oven at 350 degrees for 20-25 minutes. Pop them out of the ramekins and serve on plates.
We spent the rest of Sunday afternoon at Liz and Bernie's with Henry - he was such a good baby all day long! Then we went to Patty's for dinner and headed home.
This morning I am exhausted from the excitement of the storm last night and really wanted to stay in bed all day long. We have our next doctor's appt on Wednesday. I hope we get to schedule the ultrasound then! Pretty soon we'll know if little Jondice is a girl or a boy! How exciting!
