With cold nights in our hopefully near future (I am so dang ready for cold weather!) - what better way to warm up than to eat a nice big bowl full of white chili. This is my most favorite recipe - and I'm sharing it with you! I got it from my boss' awesome family cookbook - and made some adjustments to it as well. Enjoy!
White Chili
1 med onion, chopped
1 tbsp minced garlic
1-2 tbsp olive oil
4-6 chicken breasts, cooked (chopped or shredded)
6-8 cans white beans (navy, northern, garbanzo, cannellini, etc)
1 14oz can chicken broth
2-3 tbsp cilantro (chopped)
2 4oz cans green chilis (chopped)
1 tsp cayenne pepper
1-3 jalapenos, chopped (optional)
1 1/2 tsp cumin
1 1/2 tsp garlic salt
1 lime - use only juice
1 8oz package colby jack cheese
Saute onions and garlic in oil. Combine all ingredients in large crockpot. Can cook all day on low. It makes a big crock full!!!
Jon is a big fan of putting it on top of Fritos with some sour cream, shredded cheese and jalepenos. Yummmmy!
